We are looking for an amazing Manager, Product Development - F&B to fill this role, which is based in our Doral office. The Manager, Product Development, will lead the end-to-end development and evolution of Princess Cruises’ food and beverage product offerings, translating strategic direction into innovative, scalable, and guest-centric onboard experiences. This role is responsible for identifying opportunities to enhance the culinary and beverage portfolio, developing new concepts and enhancements, and ensuring successful implementation across the fleet.

Partnering cross-functionally with Culinary, Hotel Operations, Revenue Management, Guest Experience, and Shipboard leadership, the Manager will orchestrate F&B product development opportunities—from ideation and business case development through testing, operational validation, launch, and post-implementation performance tracking. The role requires a balance of strategic thinking, operational practicality, and data-driven decision-making to ensure concepts are financially viable, operationally executable, and aligned with brand positioning.

Responsibilities

  • F&B Product Strategy & Concept Development

    • Translate enterprise and product strategy into actionable F&B initiatives and concept roadmaps.

    • Identify gaps and opportunities within the current dining and beverage portfolio using guest insights, trend analysis, and competitive benchmarking.

    • Develop business cases for new venues, menus, beverage programs, partnerships, and experiential dining concepts.

    • Ensure new concepts reinforce brand positioning and support differentiation in the premium cruise market.

    • Establish KPIs and success metrics for F&B initiatives, tracking progress against defined targets.                    

  • Project Management

    • Define scope, timelines, success metrics, and implementation plans for new and enhanced F&B initiatives.

    • Partner with cross-functional stakeholders to validate operational feasibility and scalability.

    • Support shipboard pilots, gather feedback, and refine concepts prior to full deployment.

    • Facilitate working sessions and decision forums to resolve trade-offs between guest experience, operational complexity, and cost.

    • Ensure clear communication of product intent, standards, and performance expectations to shipboard leadership.

    • Build strong relationships with key stakeholders to drive accountability and successful delivery.

    • Monitor post-launch performance and drive continuous improvement based on financial and guest metrics.                            

  • Innovation & Continuous Improvement 

    • Stay informed on culinary trends, beverage innovation, sustainability practices, and hospitality best practices.

    • Explore partnerships, limited-time offerings, and experiential concepts to drive excitement and incremental revenue.

    • Identify process improvements that streamline execution while maintaining quality and brand standards.

    • Support broader fleet modernization and new build initiatives related to F&B programming.                                     

Requirements

  • BS/BA degree in product, business management, design, and/or other relevant discipline related to the requirements of the position. 

  • MBA or advanced degree preferred.

  • 5+ years industry-related experience and/or equivalent experiences (product, design, etc.) in other adjacent industries.

  • Ability to work across a wide range of stakeholders and subject matter experts in a highly complex and dynamic environment                  

  • Strong communications, ability to present confidently to senior leadership and cross functionals.

  • Able to synthesize results into concise written findings, create presentations, and communicate the strategic implications. 

  • Self-motivated and able to work effectively in a fast-paced culture. 

  • Strong creative, design, and critical thinking skills

  • Proven track record of success in a comparable position with a highly visible, prestigious, highly complex, and forward-thinking organization 

  • Must possess knowledge of the hospitality industry, current market trends, and economic factors; preferably within an international organization and accustomed to working with a highly diverse and remote work group

  • Exceptional interpersonal, communication, and listening skills, including the ability to adjust style to successfully implement ideas across the business/ships and effectively interact with external and internal channels.

  • Highly analytical with proven success in problem identification and implementation of timely and cost-effective solutions that meet company objectives. Proven skills in financial analysis, business modeling, and return on investment analysis.

  • Must exemplify the highest standards of honesty, integrity, and discretion.

  • Detail-oriented person who can tackle multiple projects and complex assignments

  • This position is considered Hybrid and follows the Company’s schedule of four days in the office per week (Monday – Thursday)
