The BOH Technician is responsible for maintaining a clean, safe, and well-organized kitchen and service environment while supporting the overall efficiency of Food & Beverage operations at one or more Carnival Corporation owned and operated global destination. This role assists cooks and F&B Supervisors by performing essential tasks such as ensuring proper sanitation, handling basic food preparation, maintaining and cleaning equipment, managing waste disposal, and upholding hygiene standards across kitchen, pavilion, and beach service areas. The BOH Technician helps monitor inventory of cleaning supplies, follows all safety and food-handling regulations, and supports smooth service flow by keeping workspaces stocked, orderly, and operational. Through consistent attention to detail and adherence to cleanliness protocols, this position plays a vital role in delivering a safe and high-quality experience for both guests and staff.

ESSENTIAL DUTIES & RESPONSIBILITIES: 

Sanitation & Daily Cleaning Operations 

  • Maintain sanitary conditions across all kitchen, pavilion, and beach food service areas
  • Perform daily cleaning and sanitization of waste bins, floors, tables, prep surfaces, appliances, and countertops
  • Clean and sanitize island grills daily
  • Perform pressure cleaning of bars and pavilion areas during non-ship days
  • Support proper waste management practices and uphold all environmental and food safety policies

Deep Cleaning & Equipment Maintenance 

  • Conduct deep cleaning of kitchen systems and appliances, including ice machines, dishwashers, hoods, grease traps, floor drains, and bar fans on scheduled non-ship days
  • Conduct weekly cleaning and inventory rotation in freezers, chillers, walk-in units, and dry storerooms
  • Collaborate with F&B Technician on drain and system maintenance
  • Collect used cooking oil and coordinate with the Environmental Technician for proper disposal

Food Handling, Inventory & Temperature Control

  • Assist cooks/chefs in rotating stock using FIFO (First-In, First-Out) principles
  • Help maintain and submit monthly inventory reports of frozen, refrigerated, and dry food supplies
  • Check and record temperatures in refrigeration units daily and report abnormalities immediately

Administrative, Support & Additional Duties

  • Communicate effectively with kitchen and F&B teams to support smooth operations
  • Follow workplace safety, hygiene, and environmental guidelines
  • Execute additional responsibilities and tasks as assigned by management

SKILLS SPECIFICS:

  • Ability to operate standard food service equipment safely and efficiently 
  • Strong multitasking skills in a fast-paced environment 
  • Team player with strong communication and collaboration skills 
  • Valid full medical certificate maintained bi-annually 
  • Compliance with uniform standards, including secured hair net 
  • Ability to assist in basic food preparation (e.g., chopping vegetables, portioning meat) 
  • Familiarity with food safety and hygiene standards 

EDUCATION & QUALIFICATIONS:

  • Basic education or equivalent experience is required; additional education in Hospitality or a related field is a plus 
  • Current and valid health certificate 
  • 1–2 years of experience in kitchen operations, food handling, or sanitation roles.
  • Prior experience in hospitality or food service is preferred but not always required, depending on the level of training provided.                                                                                                                                                               

LANGUAGE REQUIREMENTS: 

  • Excellent written and verbal communication and interpersonal skills.
  • Team player with strong communication and collaboration skills 

PHYSICAL REQUIREMENTS:

  • Must be physically fit. 
  • Physical capability to lift and clean heavy grills and kitchen equipment 
  • May need to stand for long periods of time.

OTHER REQUIREMENTS:

  • Proficiency in Microsoft Office Suite and familiarity with data entry and reporting tools.
  • Detail orientated with a proactive approach to problem solving.
  • Ability to multi-task and think critically
  • Problem-solving and decision-making abilities
  • Strong planning and coordination skills, especially in handling multiple priorities under tight deadlines.
  • May be requested to work a shift schedule while at any of the destinations.
